Ingredients
• 2 servings of thin wheat noodles or rice noodles
• 2 ginseng capsules (from Tota Farms, if possible, or powdered ginseng equivalent to 1 tsp)
• 2 cups chicken or vegetable broth
• 1 tbsp sesame oil
• 1 tbsp soy sauce (or tamari for gluten-free)
• 1 tsp oyster sauce (optional)
• 1 clove garlic, minced
• 1 small knob of ginger, finely chopped
• 1 medium carrot, julienned
• 1 cup bok choy, chopped
• 1 green onion, sliced (for garnish)
• 1 soft-boiled egg (optional, for garnish)
• Sesame seeds (optional, for garnish)
Instructions
1. Prepare the broth: In a medium pot, heat the chicken or vegetable broth over medium heat. Stir in the ginseng powder or open the capsules and add the contents. Allow the ginseng to infuse for 5 minutes.
2. Cook the noodles: While the broth simmers, cook the noodles according to the package instructions. Drain and set aside.
3. Sauté aromatics: Heat the sesame oil in a pan over medium heat. Add the garlic and ginger, sautéing until fragrant (about 1 minute).
4. Add vegetables: Toss the carrot and bok choy into the pan. Stir-fry for 2-3 minutes until tender but still vibrant.
5. Combine: Pour the broth into the pan with the sautéed vegetables. Add soy sauce and oyster sauce (if using). Simmer for 2-3 minutes to combine the flavours.
6. Assemble: Divide the cooked noodles into bowls. Ladle the hot ginseng-infused broth and vegetables over the noodles.
7. Garnish: Top with green onion, sesame seeds, and a soft-boiled egg if desired. Serve hot and enjoy!
Notes
• For a vegetarian version, use vegetable broth and skip the oyster sauce.
• Adjust ginseng quantity based on your taste or consult with your doctor if you’re unsure about herbal consumption.
• Pair with a jasmine tea for a truly revitalizing experience!
