Ingredients

Scale
  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp Tota Farms ginseng powder
  • Salt & pepper to taste
  • Paprika, for garnish
  • Chopped chives or parsley (optional)

Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes.
  2. Cool & peel: Transfer eggs to an ice bath. Once cooled, peel the shells and pat eggs dry.
  3. Slice & scoop: Cut eggs in half lengthwise. Carefully remove yolks and place them in a bowl.
  4. Make the filling: Mash the yolks with mayonnaise, mustard, vinegar, ginseng powder, salt, and pepper until smooth and creamy.
  5. Pipe it pretty: Spoon or pipe the mixture back into the egg whites (a ziplock bag with the corner cut off works in a pinch!).
  6. Garnish & serve: Sprinkle with paprika and chopped chives or parsley if desired. Chill until ready to serve.

Notes

  • For extra zip, add a dash of hot sauce or horseradish to the filling.
  • Ginseng powder is potent—start small and adjust to taste.
  • These pair perfectly with a chilled herbal tea or sparkling water with lemon!
