Description
๐๐ฅ Buckle up and grab your stretchy pants, because weโre about to flip the pancake world on its buttery little head! Introducingย Ginseng and Blueberry Pancakes: the ultimate breakfast mashup thatโs basically a hug for your insides. Weโre talking fluffy clouds of pancake goodness, bursting with juicy blueberries and sneaky ginseng magic to make you feel like a superhero BEFORE your second coffee. Itโs like your grandmaโs pancakes went on a wellness retreat and came back doing yoga poses on your plate. Ready? Letโsย flip into it!
Ingredients
- 1 ยฝ cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- ยฝ teaspoon baking soda
- ยผ teaspoon salt
- 1 teaspoon ground ginseng powder (you magical creature, you!)
- 1 cup buttermilk (or milk + 1 tbsp lemon juice, if youโre feeling DIY-ish)
- 1 large egg
- 2 tablespoons melted butter (plus extra for the pan because, duh)
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries (frozen = tiny blueberry ice bombs, yes please)
Instructions
- Mix the dry stuff:ย In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and ginseng powder like youโre stirring up mischief.
- Mix the wet stuff:ย In another bowl, whisk the buttermilk, egg, melted butter, and vanilla until it looks like creamy, dreamy heaven.
- Make the magic happen:ย Pour the wet ingredients into the dry ingredients. Stir lovingly untilย justย combined โ lumps are okay! (If your batterโs smoother than your pick-up lines, you went too far.)
- Fold in the blueberries:ย Gently fold them in, like youโre tucking tiny fruity babies into their batter bed.
- Cook โem:ย Heat a non-stick pan or griddle over medium heat. Brush lightly with butter. Scoop ยผ cup of batter per pancake onto the pan. Flip when bubbles form on top and the bottoms are gloriously golden (about 2โ3 minutes per side).
- Serve:ย Stack โem high, drizzle with maple syrup, throw a few extra blueberries on top if youโre feeling fancy, and enjoy the applause from your taste buds.
Notes
You can swap blueberries for chocolate chips if youโre feeling particularly rebellious.
Want to go full wellness wizard? Add a handful of chia seeds into the batter.
Ginseng powder can be strong! If youโre new to it, start with ยฝ teaspoon and work your way up to a full teaspoon.
Use medium heat โ we want golden, not burnt offerings to the breakfast gods.
