Ingredients
• 6 large eggs
• ¼ cup milk (or dairy-free alternative)
• ½ teaspoon salt
• ¼ teaspoon black pepper
• 1 teaspoon ginseng powder (or 2 ginseng capsules, opened and emptied)
• 1 tablespoon olive oil or butter
• 1 small onion, diced
• 2 cloves garlic, minced
• 2 cups fresh spinach, chopped
• ½ cup crumbled feta cheese (or shredded cheese of choice)
• ¼ teaspoon red pepper flakes (optional)
Instructions
1. Preheat & Prep: Preheat your oven to 375°F (190°C). In a bowl, whisk together eggs, milk, salt, pepper, and ginseng powder. Set aside.
2. Sauté the Aromatics: In an oven-safe skillet, heat olive oil or butter over medium heat. Add the diced onion and cook until softened (about 3 minutes). Stir in the garlic and cook for another 30 seconds until fragrant.
3. Wilt the Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
4. Combine & Cook: Pour the egg mixture into the skillet, stirring gently to distribute the ingredients evenly. Sprinkle the feta cheese and red pepper flakes on top.
5. Bake: Transfer the skillet to the preheated oven and bake for 12–15 minutes or until the frittata is set and lightly golden on top.
6. Cool & Serve: Let it rest for a few minutes before slicing. Serve warm or at room temperature.
Notes
• If you don’t have ginseng powder, you can grind dried ginseng root into a fine powder.
