Ingredients
1½ cups water
¾ cup granulated sugar
2 tsp dried ginseng root slices or 1 tsp ginseng powder
1 tbsp lemon zest (about 1 lemon)
¾ cup fresh lemon juice (about 3 lemons)
Pinch of salt
Optional: 1 tbsp honey for extra smoothness
Instructions

Make the syrup:Â In a medium saucepan, combine water, sugar, ginseng, and lemon zest. Bring to a boil, stirring until the sugar dissolves.

Infuse:Â Reduce heat and simmer for 5 minutes. Remove from heat, cover, and let steep for 15 minutes.

Strain:Â Pour the mixture through a fine mesh sieve to remove ginseng and zest.

Mix:Â Stir in lemon juice and a pinch of salt. Taste and add honey if desired.

Chill:Â Transfer the mixture to the fridge and chill until completely cold (at least 2 hours).

Churn: Pour into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes.

Freeze: Transfer sorbet to an airtight container and freeze for 2–4 hours or until firm.

Serve:Â Scoop into bowls or glasses and garnish with a lemon twist or ginseng sliver.
Notes
For a vegan version, skip the optional honey.
Using ginseng powder instead of slices will slightly alter the flavour and colour but is quicker.
Store sorbet for up to 1 week for best texture and flavour.
