Ingredients
Scale
- 2 teaspoons ginseng powder (or 1 tablespoon fresh ginseng root, grated)
- 2 cups mixed fruit, chopped (e.g., strawberries, apples, mango, blueberries)
- 1 tablespoon lemon juice
- 2 tablespoons honey or maple syrup (optional for sweetness)
- 1/4 cup water (if needed, for blending)
Instructions
- Preheat the Oven: Preheat your oven to 150°F (65°C) or the lowest setting. Line a baking sheet with parchment paper or a silicone baking mat.
- Blend the Ingredients: In a blender or food processor, combine the chopped fruit, ginseng powder (or grated ginseng root), lemon juice, and honey/maple syrup. Blend until smooth. Add a little water if necessary to achieve a thick, pourable consistency.
- Spread the Mixture: Pour the fruit mixture onto the prepared baking sheet. Use a spatula to spread it evenly, making sure it’s about 1/8 inch thick. Try to keep the edges slightly thicker than the center to prevent over-drying.
- Dry the Fruit Leather: Place the baking sheet in the preheated oven. Dry the mixture for 6-8 hours, checking occasionally. The fruit leather is ready when it is no longer sticky to the touch and peels away easily from the parchment.
- Cool and Cut: Once dried, remove the fruit leather from the oven and allow it to cool. Peel it off the parchment and cut it into strips or shapes as desired.
- Store: Roll the strips in parchment paper and store them in an airtight container. They will keep for up to 2 weeks at room temperature or longer in the refrigerator.
Notes
- Ensure the mixture is spread evenly to prevent uneven drying.
- Experiment with different fruit combinations for unique flavors.
