  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

If you’re looking to impress dinner guests so hard they consider writing you into their will, this Ginseng and Herb-Crusted Lamb is your ticket. Combining the earthy energy of ginseng with the boldness of fresh herbs, this dish packs enough flavor to start its own rock band. The lamb gets a golden, crispy herb crust that sings with ginseng’s legendary vitality — making every bite both a culinary masterpiece and a life upgrade. Whether it’s a fancy holiday feast or just a Tuesday you decided needed a little main-character energy, this recipe’s got your back (and your taste buds).

Ingredients

Scale
  • 1 rack of lamb (about pounds), frenched
  • 2 tablespoons ginseng powder (hello, power-up! 🚀)
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • ½ cup breadcrumbs (panko preferred for maximum crunch-a-lot)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter (for extra “ooh la la” at the end)

Instructions

  1. Preheat your oven to 400°F (205°C) — we’re about to make it hotter than a drama-filled season finale. 🔥
  2. Season the lamb generously with salt and pepper on all sides.
  3. In a bowl, mix the rosemary, thyme, garlic, ginseng powder, and breadcrumbs.
  4. Rub the lamb with Dijon mustard like you’re giving it a spa treatment. 💆‍♀️
  5. Press the breadcrumb and herb mixture all over the mustard-coated lamb. Pat it down gently — show it some love.
  6. Heat olive oil in a skillet over medium-high heat. Sear the lamb, crust side down first, until it’s golden and delicious (about 2 minutes per side).
  7. Transfer the lamb to a roasting pan. Toss that baby into the oven and roast for about 15–18 minutes for medium-rare.
  8. Remove from the oven and let it rest (lamb deserves a nap too!) for 10 minutes.
  9. Melt the butter and drizzle it over the lamb before slicing. Bonus flavor points: unlocked. 🎯

Notes

If you like your lamb a little more “shy” (aka medium), add 3–5 extra minutes to roasting time.

Want a bigger ginseng boost? Add a pinch of ginseng powder into the melted butter before drizzling!

Fresh herbs are the VIPs here. Dried herbs are okay in a pinch but won’t throw the same party.
